Molten cakes are perfect to serve this Noche Buena. The warmth of the cake and its oozing chocolate, will surely make everyone's palette asking for more.

A few days ago, I tested if I will be able to make my own lava cake from scratch. Surpisingly, it did and here's how I did it.



You'll need the following:
 
2 oz. semisweet chocolate
10 tbsps butter (1 1/4 stick)
1/2 cup all purpose flour
1 1/2 confectioner's sugar
3 large eggs
3 egg yolks
1 tsp vanilla extract



Preheat the oven at 350 F.

1. Melt the chocolate in a double boiler style. I didn't have that so I had to improvise. I placed a bowl on top of a saucepan with boiling water. Melt the morsels until there are no more lumps.


2. Mix all the dry ingredients. Add the 3 eggs. Fold everthing in. Add the 3 egg yolks and mix again.


3. When there are no more lumps, pour the mixture onto the ramekins. Make sure that the ramekins are buttered.


4. Bake the cake for 10 minutes.


5. After baking, remove the cake from the ramekin and serve it upside down. Sprinkle with confectioner's sugar and garnish with strawberries, blueberries, what have you. 

Break the centre and see the molten chocolate ooze out.

Tip: Baking time depends on how runny you prefer the chocolate to be. If you wan't it oozing and liquid-ish, bake it around 10 minutes. If you want it to be firmer, bake it longer. What you'll have then is a very moist cake. Both ways, they're perfect.
